Q: Is there a benefit to using an "ale pail" as opposed to a glass carboy? If not, what all would I need to upgrade?

A: There are benefits for using an ale pail for primary fermentation one being that it is much easier to clean after it has been used because you can take the lid off and directly wipe and scrub off the old yeast left from fermenting it is also easier to get the wort into the bucket in the first place via pouring or using a siphon. I would however suggest that adding a 5 gallon glass carboy for a secondary fermenter would be a good idea so you can transfer your fermented beer into a smaller vessel for clearing and conditioning, dry hopping or adding any flavoring.

A: This kit does not come with a burner. If you need a burner item # 99-2020 is perfect for this set up.

Q: Does the boil kettle and sparge tank have ball valves or is the intent to pour or syphon?

A: Neither the boil kettle nor the hot water pot have ball valves. We use a 1 quart measuring cup to scoop water from the HLT and pour gently into the mash tun. After you've finished chilling the wort, you can either pour or use the included siphoning equipment to transfer to your fermentor.
