We discovered that, when fermented together, these two grapes create a wine whose excellence surpasses that of either component variety. This discovery is being brought to you in our 2007 Summer Limited Release program for a truly exciting wine experience.
The Pinot Gris is a soundly structured wine with big mouth feel, lively notes of green apple and grapefruit, and a luscious layer of honey.
Viognier resonates with exotic aromas and flavours dominated by peach, apricot, tangerine, and spiced pear.
Fermented together, these two selections create a distinctive wine with intense aromatics, luscious fruit flavours, and lively citrus notes that take on a new sophistication with the depth and structure of Pinot Gris.
The wine finishes dry. It is crisp and medium-bodied when very young. After a few months ageing it begins to show mineral notes, developing a fuller mouth feel and a longer finish defined by a spicy, honeyed intensity.
It will continue to develop for 12-18 months. Very food friendly, it pairs well with seafood, Asian dishes, fowl, and pork. Always wonderful as an aperitif. Serve slightly chilled.
