Chimay Red at a fraction of the cost! Rich and hearty but also sweet, well balanced but interesting. Bottle condition for best results. One of the very few beers that actually improves with age...up to a couple years or so. Try it, you'll like it... You really need to use the liquid (specialty) yeast to get the true Chimay fruitiness, there isn't a dry version of this yeast. A great selection for your summer brewing when fermentation temperatures are a little high. Premier Classique Red Star Wine Yeast (included with recipe kit) can be added to your secondary for a second fermentation, this dries it out and helps with proper carbonation.

Chimay Red Clone Recipe Kit

Great Kit

Last batch I used White Labs Monastery yeast first then the Lakvin Montpellier Wine yeast for the secondary fermentation and it turned out really good. This time I’m trying the Wyeast smack pack. It took off like crazy so hopefully it will be as good.

Fantastic

Ok so I fermented in primary for a month. Kegged it and put some co2. Drank some, could not tell the difference from the real thing. One of the best extract kits out there.

Excellent recipe

This recipe is excellent. I just drank a bottle that was bottled almost exactly one year ago and has been in my beer fridge for about 9 months. Flavor and body is excellent. Brewing details: I brewed with 2 weeks in primary fermenter and 2 weeks in a secondary fermenter. Yeast was Wyeast 1214 Abbey Ale. AIH, thank you for having this recipe!
