Time is your friend

I brewed this back in Oct 2019 and left it in the secondary for about 3 months. It finished at just under 11% ABV and the first few bottles were harsh. I let the bottles sit in a cool space for another few months and they have mellowed out nicely. It has a good balance between the bitterness and sweetness. I would make again but as personal preference I'd put the honey in with 10-15 minutes to go and use one less ounce of bittering hops. If bottling, I recommend cask/bottle yeast due to high ABV and long secondary fermentation.

Excellent

I made this and aged it with bourbon and oak chips for 5 months. It is delicious. Similar to the original too. Mine ended with 11.1% ABV. Highly recommended.
