Kerry FermCap S -15g
Kerry FermCap® S is a unique, and extremely effective, emulsion of dimethylpolysiloxane. It is a surface active agent that stops foam formation during fermentation by reducing the surface tension of the liquid. By reducing foaming you increase fermentation capacity, prevent messes, improve alpha-acid utilization and CO2 recovery, and prevent haze due to collapsed foam. Due to the novel properties of FermCap®, it completely adsorbs onto the yeast, vessel walls, and filter media. No FermCap® is left in the finished beer.
Store FermCap® S below 85°F, but do not let it freeze.
Recommended usage: Shake the bottle vigorously before use. For 5 gallons, mix 0.2-1.6 grams into wort when it is transferred into the fermentation vessel. If you have already pitched your yeast, you should apply FermCap® as a spray to the fermenting wort to avoid mixing it with the yeast. You might need to use higher rates or additional doses if the wort contains large amounts of trub (solids), if the fermenting vessel is tall and narrow, if the wort is highly viscous, if foam is plentiful or robust, if the fermentation temperature is high, or for any other reason.
