Optional HERMS conversion kit:
HERMS - (Heat Exchange Recirculating Mash System)
Many brewers are choosing HERMS as an option to maintain mash temperatures and perform step mashes without direct fired heat. The HERMS coil option offers a 1/2" x 50' stainless coil in the hot liquor tank that allows the brewer to recirculate the mash runoff through the coiled heat ex-changer and back into the mash tun. The coil is factory installed only and pressure tested before it ships.
The HERMS Conversion Kit for the Alpha Ruby Street Brewery will include:
50’ ½” SS HERMS coil mounted in the HLT with through wall fittings (tri-clover on top, ball valve and tri-clover at the bottom)
Additional heat shielding welded onto HLT burner grate to protect lower HERMS coil ball valve
The digital control package also works with or with out the HERMS option.
(Recirculating Infusion Mash)
The ability to recirculate your mash is standard on Ruby Street Systems without the optional digital controller system. Controlling the temps on your mash can be done manually, but with the digital controller these temps are controlled, firing your burner automatically, and is highly recommended.
Many Brewers are choosing the option to maintain mash temperatures and perform step mashes by applying direct heat to the mash tun from a burner, either fueled by propane or natural gas. The pump keeps the wort recirculating fast enough so that there are no worries about scorching the wort. The pump runs continuously during the mash and the heat, the flame is cycled on and off by a Digital Controller to maintain the set temperature in the mash. Ruby Street also offers their own newly designed Digital Controller, please see the options.
Optional 50 Gallon Pot Updrade
Now you can get 50 gallon pots with the Alpha, this will replace the 45 gallon pots. Please select which kettles you would like to upgrade to 50 gallons. Please see options.
Optional HLT Thru-wall Return Fitting
Many brewers prefer to re-circulate and/or sparge with the kettle lids on. The thru-wall return fitting option makes this process easy. This fitting is generally mounted at the top of the kettle just below the rim.
Thru-wall fittings mounted in HLT kettle will include a silicone tube that reaches the bottom of the kettle to prevent splashing.

Optional Digital Control Package
Ruby Street now has designed their own Digital Controller for their systems. Made from the highest quality components available right here in the USA!

Optional Inline Oxygen Package
A fast and easy way to oxygenate your cooled wort. Equipped with stainless tri-clover fittings, this inline oxygen stone can be placed on the outflow side of your pump or chiller. Includes a regulator that attaches to a standard welding oxygen tank and 6’ of vinyl tubing.
Optional Sight Gauge
Now you can get a sight gauge installed on your Boil Kettle or HLT.

Optional Plate Chiller Package
Ruby Street has a complete plate chiller package that will be installed on your Ruby Street frame.

Optional Stainless Steel Hop Filter
The hop filter makes cleaning your brewery a breeze. The large capacity 6" x 14" 300 micron screen is made of 100% stainless steel. These screens will contain the majority off all hop material from both whole hops and pellet hops. We highly recommend this option when using plate chillers to avoid trapped hop material in your chiller. You can also recirculate through the hop filter while chilling to capture cold break protein material.

3 piece ball valve w/tri-clamp connection.
If you are not getting the best flame possible out of your propane burner, you may have triggered a safety valve in the propane regulator body. This occurs when the gas flow through the regulator is too great. You will need to disconnect the regulator from your propane tank to release the safety valve. While connecting your regulator to your propane tank, it is very important that the propane tank and all needle valves are completely closed. Once the regulator is correctly connected to your closed tank, open the propane tank slowly to allow gas to flow into the regulator. You can now open the needle valve enough to ignite your burner. Once the burner is lit you can slowly open the needle valve until you reach the desired flame intensity.
