Designed as a Nano Brewery / Pilot Brewery, this system features 4-45 Gallon Kettles and will brew a true 2 bbl (63gallon) batch. The SideKick is included with this system in order to make this happen.
The SideKick was designed to serve as a 4th burner and kettle for the Alpha Ruby system. If you have a source for sparge water such as a commercial on-demand water heater, this Alpha Ruby comes with 2 mash tuns and 2 boil kettles.  If you order your Alpha Ruby 2 bbl system with the Digital Control Package, you will need the supplemental ignition control package (available option) this will allow you to control the SideKick burner from your main Alpha Ruby controller as well. Featuring three stainless pumps and all 1.5" tri-clover connections, this brewery has found its niche as an economical option for both brew pubs and home brewers!

There are many ways to make this system your own, this system is set up with 2 mash tuns and 2 boil kettles. There is no need for the HERMS option if you are going to use this System for brewing 2 bbl batches. But you may have other options in your style of brewing, e.g. You want use it as a 1 bbl system and use the SideKick for kettle souring. Optional HERMS conversion kit:
HERMS - (Heat Exchange Recirculating Mash System)

The HERMS Conversion Kit for the Alpha Ruby Street Brewery will include:
50’ ½” SS HERMS coil mounted in the HLT with through wall fittings (tri-clover on top, ball valve and tri-clover at the bottom)
Additional heat shielding welded onto HLT burner grate to protect lower HERMS coil ball valve
The digital control package also works with or with out the HERMS option. 

(Recirculating Infusion Mash)
The ability to recirculate your mash is standard on Ruby Street Systems without the optional digital controller system. Controlling the temps on your mash can be done manually, but with the digital controller these temps are controlled, firing your burner automatically, and is highly recommended.

Many Brewers are choosing the option to maintain mash temperatures and perform step mashes by applying direct heat to the mash tun from a burner, either fueled by propane or natural gas. The pump keeps the wort recirculating fast enough so that there are no worries about scorching the wort. The pump runs continuously during the mash and the heat, the flame is cycled on and off by a Digital Controller to maintain the set temperature in the mash. Optional 50 Gallon Pot Updrade
Now you can get 50 gallon pots with the Alpha 2 bbl System, this will replace the 45 gallon pots. Please select which kettles you would like to upgrade to 50 gallons. Please see options.

Optional Digital Control Package
Ruby Street now has designed their own Digital Controller for their systems. Made from the highest quality components available right here in the USA!

Digital Controller Package will include: 
Digital Control Panel and Bracket (1)
Sensor Cables (2)
Ignition Coil Box (1)
Solenoid Valves (3)
Temperature Sensors (3)
Burner Electrodes (3)
The digital control package also works with or with out the HERMS option.
Plase keep in mind if you choose to add the Digital Control Package option to you system, you will need to add the Supplemental Ignition for the SideKick in order to control all burners with the Digital Control Package.

Optional Supplemental Ignition Control for the SideKick
This option allows you to integrate the SideKick burner into the Ruby Street Digital Controller. This option is only applicable to those purchasing this system with the Digital Control. Turns the SideKick burner into a push button ignition unit.

Optional Inline Oxygen Package
A fast and easy way to oxygenate your cooled wort. Equipped with stainless tri-clover fittings, this inline oxygen stone can be placed on the outflow side of your pump or chiller. Includes a regulator that attaches to a standard welding oxygen tank and 6’ of vinyl tubing.

Optional Sight Gauge 
 If you would like a sight gauge installed on one or both of your Boil Kettles, please see the options.

Optional Plate Chiller Package
Ruby Street has a complete plate chiller package that will be installed on your Ruby Street frame.
Package includes:
· Duda Brand 30 Plate all Stainless Chiller mod# B3-36A
· Bracket to fit any of our frames powder coated to match
· Mounting hardware
· Tri Clover wort connections with 3” dial outflow thermometer
· Male and female garden hose fittings on water side of chiller
· Can be sold and shipped with Ruby Street systems and frames.

Optional 50 Foot Immersion Chiller
50 ft. Immersion Chiller is coiled with 3/8" copper tubing and fitted with quality brass garden hose connectors.
If you would like to add a 50' Immersion Chiller please see the option.

Optional Stainless Steel Hop Filters
The hop filter makes cleaning your brewery a breeze.  The large capacity 6" x 14" 300 micron screen is made of 100% stainless steel.  These screens will contain the majority off all hop material from both whole hops and pellet hops.  We highly recommend this option when using plate chillers to avoid trapped hop material in your chiller.  You can also recirculate through the hop filter while chilling to capture cold break protein material.

Optional Whirlpool Arms
If you would like a whirlpool arm assembly added to one or both of your boil kettles, please see the options.

Propane Troubleshooting:
If you are not getting the best flame possible out of your propane burner, you may have triggered a safety valve in the propane regulator body. This occurs when the gas flow through the regulator is too great. You will need to disconnect the regulator from your propane tank to release the safety valve. While connecting your regulator to your propane tank, it is very important that the propane tank and all needle valves are completely closed. Once the regulator is correctly connected to your closed tank, open the propane tank slowly to allow gas to flow into the regulator. You can now open the needle valve enough to ignite your burner. Once the burner is lit you can slowly open the needle valve until you reach the desired flame intensity.
