Q: Are your American Oak chips organic?

A: American Oak Chips are lightly Toasted but not as heavy as French oak or Hungarian oak.
Q: I'd like to use these in a secondary fermentation to simulate a Porter aged in whiskey or bourbon barrels. How many ounces would I add and how long would you suggest soaking these chips in a whiskey for a five gallon batch.

Q: How many ounces of oak chips are needed and how long
in a five gallon carboy will it take to inhance the wine?
A: Typically 1-3 ounces of chips would be adequate for a 5 gallon batch of wine, 2-4 ounces for a 6 gallon batch. The time you should leave them in the carboy is relative to the flavor you are looking to achieve. Simply take sanitized samples every couple days, and rack the wine off of them when it reaches your desired flavor!
