Q: I'm making a witbier for the holiday season (for family members who like it on the lighter side) and would like to use dried ginger for aroma/slight flavor. My plan is to add to the boil the last 5-minutes but I'm not sure about the amount. There is not much malt background (wheat/pilsen malt) so I'm afraid it could get overpowering. Any thoughts on how much to add for a 5-gallon batch?
A: The ginger can be added into the last 5-10 minutes of the boil. Starting with about 1/2oz for a lighter beer, and then steeping some in secondary if the flavor profile is not a pronounced as you'd like can be done as well can help to boost the profile if needed
