Chimay Red Clone Recipe Kit

Chimay Red at a fraction of the cost! Rich and hearty but also sweet, well balanced but interesting. Bottle condition for best results. One of the very few beers that actually improves with age...up to a couple years or so. Try it, you'll like it... You really need to use the liquid (specialty) yeast to get the true Chimay fruitiness, there isn't a dry version of this yeast. A great selection for your summer brewing when fermentation temperatures are a little high. Premier Classique Red Star Wine Yeast (included with recipe kit) can be added to your secondary for a second fermentation, this dries it out and helps with proper carbonation.

Better With Age
This beer is very good after a month in the bottle but do yourself a favor and let it age. Most of this batch was gone within 4 months but I did manage to hang on to a few bottles for extended aging. I tucked away 6 bottles for two years and it is now absolutely fantastic. So much better than when it was "young". Nearly identical to the real Chimay! Brew it up and keep your hands off of it. Forget you have it. Its 10 times better and well worth the wait!

Awesome Beer
I tried the original at World of Beers in Atlanta and was happy to know that AIH had a cloned version. I tested my first bottle after 10 days of conditioning and I am completely amazed. My wife was even more impressed, but did mention the high alcohol content which I am perfectly ok with. I highly recommend anyone include this in their brewing list.

Amazing Beer
This was the second beer kit that I brewed so I was a little worried about this beer but it turned out perfect. My dad who is a big fan of this style thought it wasn't a homebrew as it was a 95% match. It is a little heavy for every day drinking so we would start with this then switch to a IPA. All in all it turned out great! Will buy again. Thanks AIH.

A very nice and smooth beer
I got a very smooth beer after about two months of aging in the bottle. By my measurements the ABV ended up around 6%. I used Irish moss which resulted in a very clear beer. I can’t tell it is exactly a Chimay, but it is no doubt one of the greatest beers I have ever brewed.

Turned Out Great
The Red Chimay turned out great. I have never had the commercial version but I like this one. It has a complex taste and a little sweet. I feel like I need to put on a sweater vest to drink it (but I don''t own one). Life is good in the middle of January. Thanks AIH. I will probably be ordering a couple of free shipping kits this weekend.
