Chocolate Stout
A beer that I will brew over and over. Nice flavor and if a half shot of peanut butter whiskey is added it just gets better.

Great choco-stout!
I brewed this as the directions noted, then added cacao nibs in the secondary that had been soaked in vodka to extract flavor. I fermented 3 gallons with just the cacao, 1 gallon with cacao and tart cherries (thawed from frozen), and 1 gallon with cinnamon sticks (4 sticks/gallon) and Thai peppers (2 de-seeded peppers/gallon). The beer fermented 3 weeks between the two stages (1-1st and 2 weeks-2nd) and has been in bottles for a week. We opened one of the cacao bottles last night and have decided to give it a little more time. I plan to let a bomber (or two) of the cherry and the cinnamon/pepper age longer to see how that works out. Very happy with this kit.

Smooth with a hint of Chocolate
This is my first brew and it came with the kit. I fermented for one week in the pail then racked to the carboy for 2 weeks. I tasted today before bottling and my wife and I found it smooth with a hint of chocolate. Just enough bitter to make it beer and the extra time in the carboy helped drop some of the burnt flavor I taste in Commercial Stouts. VERY NICE! I will leave it in the carboy for another week then bottle.

Great stout recipe
Very good recipe, and a great base to experiment with and tweak like adding cacao nibs (was great) and adding coffee (just bottled). Next time I'd like to make it blacker and add more body and maybe even more chocolate flavor.

Great Beer
I wasn't sure what to expect from this being it was the first AIH beer kit I have done. It turned out excellent. Plenty of chocolate flavor without using anything extra. I kept half the batch as is, and added cherries in the secondary for the other half. Both turned out amazing. I would recommend this to anyone who likes a good easy to brew tasty stout.

1st Brew
This was my very first brew. Followed the recipe and instructions to to letter. Just cracked my 1st bottle and it tastes great, just not a chocolate stout in my opinion. Reminds me of a German stout. Krombacher Dark is what I think of. Good beer. Kit was great and instructions clear and easy to follow.

Great stout
This was a wonderful stout. I did make a couple of small modifications such as adding the cocoa nibs for two weeks as others have done and I also added three cups of espresso when I racked the beer. I also used the Irish yeast instead of the California yeast. The result is awesome.

Will be brewed frequently.....
Followed directions, with the exception of adding 4 ounces of cocoa nibs soaked in cherry bourbon. Great combination! Soaked the nibs for 2 weeks, then added to secondary for a week before bottling. Wow.

Great beer, good value
I made this chocolate stout very recently and it turned out much better than I had even imagined. The body was full, good hop presence, and smooth finish makes this beer very drinkable. I will make this one over and over. Thanks AIH.

Simply Delicious!!!
This is a fantastic chocolate stout. Followed the recipe 100% and it delivered! I am purchasing again as soon as I finish the review. Two weeks first fermentation then two weeks second fermentation. Three weeks bottle condition then into the refrigerator. It's that easy and wow what a wonderful result! ENjOY

Buy this kit NOW!! Stop thinking about it!
So if you're reading this you landed on the chocolate stout maybe because you like chocolate stouts or you thought "ooooh chocolate stout sounds interesting". Either way, I ordered this kit and followed the instructions to a "T". I even did a partial boil(I normally do a full). The only thing I did different was add a package of theobroma cocoa nibs 3 weeks after pitching yeast. The stout sat on top of them for one week for a 4 week total yeast pitch-to-keg timeframe. This is ridiculously awesome! AIH... Please NEVER ket rid of this....hell I would bump up the price a hair and sell it with the cocoa nibs! Slightly sweet, fairly roasty, great chocolate aroma and flavor with enough hops to balance. I used the dry yeast, good ol' US-05...I've never had a bad experience with it. Great kit and I'm going to blow through this keg!

Excellent Chocolate Stout
I have personally brewed this kit 5 times. I have bottled it as well as kegged it. I simply LOVE IT!! "Can't see thru it DARK"...perfect FLAVOR...PERFECT recipe! I highly recommend you try this one...you won't be disappointed!

a copy of the recipe can be sent over before ordering if needed, to use DME instead of the LMe, but would require the items for the kit to be ordered a la carte, as the DME option would not be rolled into the cost of the kit

Most stouts dont have a dry hop addtion as this is geared more towards IPA's pale ales and the like to give us an extra burst of hop aroma. 1 week secondary on this kit would suffice, and for adding the priming sugar, I like to make a simple syrup out of a pint of water,and 1oz of corn cugar per gallon of beer your bottling. Let this boil for about 5 minutes to dissvole and add it into your bottling bucket before siphoning in your beer to mix

This batch would lend well to a coffee addtion. If using whoe or coarsely ground coffee, I normally add this into the last 10 minutes of the boil. More can be added to the secondary to steep if more flavor is needed

I see a lot of people using cocoa nibs. I also see some people roast them, crush them, soak them in vodka, etc. What is the recommended use/implenetation for cocoa nibs. Do you really need to roast them, etc. or can you just put them in the secondary fermenter and soak for 5 - 7 days?

There are many right ways to add cocoa nibs to your beer. I typically recommend putting cocoa nibs straight into secondary for 1-2 weeks. This has always been successful for us!

Either would be fine. The only downside is the muslin bag limits the surface area that comes in contact with the nibs, and would need to be sanitized before use in your secondary.

Thanks for the question. Yes, the best time to add the priming sugar would be right before you bottle the brew. You can take a look at a priming sugar calculator online, this will calculate based on a few variables so you can ensure you add the perfect amount. Cheers!

In the instructions it is not listed when to add the Maltodextrin when brewing this kit. If Maltodextrin is considered a fermentable should it be in the “Fermentable” box? When should this be added?

In the instructions it says: "After 5 minutes (60 total minutes), remove heat source from the Brew Pot. Add the Knock Out Hops . Leave the Knock Out Hops in the Wort while cooling." This is confusing. When do you add the hops? After 5 minutes or at the end of 60 minutes for the last 5 minutes? Can you please clarify this for me? All the instructions say the same verbiage, it's just not clear to me. Thanks!

I turn the flame off and add the hops, stir and start your chiller if you have one. This is why it is also referred to as flameout hops.

Up to 8oz of Maltodextrin can be used in a 5 gallon batch. Most people do use the full 8oz.

Just racked it into my secondary and it really didn't have the chocolate after taste I thought it would but I understand it's not done doing its thing yet. My question is will the chocolate taste become more evident as it gets older, or should I add something like coco nibs or chocolate syrup to the secondary to help with the taste? I don't want a chocolate milkshake just a more of an aftertaste of chocolate.

This brew uses Chocolate Malt instead of actual chocolate, so if you are looking for a richer chocolate flavor cocoa nibs would be what you are looking for. I wouldn't recommend chocolate syrup.

Can you do a full boil on this? or is it only partial boil?

If you have the equipment to do so, I would highly recommend doing a full boil. We write these recipes with the beginner in mind, who may not have a large brew pot.

This kit comes with an ounce of Willamette and an ounce of fuggle hops that you add at 60 minutes and 5 minutes left in the boil.

The grains come crushed with this kit. If you do not want them crushed there is an option when you check out to have them uncrushed.

Any yeast we would send, would work. If you want to play it safe, I would opt for dry yeast.
