A: the slotted spoon could be used to remove curds as well. it will allow the whey to drain so they are just two different designs

A: This is essentially a large ladle or spoon used to lift curds, or whey out of the container or kettle while producing the cheese. The ladle has markings on it similar to a measuring cup to use if the recipe calls for the removal of a certain volume of product
