This wine turned out great. My friends and family have all enjoyed its fresh and somewhat complex flavors of apple and berry. It has some sweetness to it as well.
I started this kit on June 1st 2017, with a original gravity of 1.052. I used Red Star Cote des Blanc yeast rather than the EC-1118 that comes with the kit. I like that the Cote des Blanc leaves some residual sugar, creating a sweeter wine.
Here's my journal for some background: OG: 1.052; racked at .998, nine days later. On day 17 FG was .996, degassed, stabilized, cleared, and added F-Pack. New SG was 1.014 post f-pack. Bottled on day 30 (7/1/17).
This was a big hit at the 4th of July get together's. Someone mentioned that the name I had chose was appropriate (Risque) because this wine was dangerously good.
When I make this again I plan on trying the Red Star premier rouge yeast, as it may do better with the red syrah grapes. Otherwise I fully recommend this kit.
