Pitching/Fermentation : The K1V-1116 strain is a rapid starter with a constant and complete fermentation between 10° and 35°C (50° and 95°F), capable of surviving a number of difficult conditions, such as low nutrient musts and high levels of sulfur dioxide (SO2) or sugar. Wines fermented with the K1V-1116 have very low volatile acidity, hydrogen sulfide (H2S) and foam production.

Active Fermentation

The must of my grape/rhubarb is in its sixth day in the primary fermentation bucket. The Lalvin 1116 yeast was noticeably active within 24 hours of casting and has been vigorous ever since. Specific gravity dropped from an initial reading of 1.090 to 1,040 by day five. Planning to transfer to secondary fermentation carboy on the seventh day. Very happy with this yeast.
