Pitching/Fermentation : It will ferment very dry and produce a compact sediment. Another use of this yeast is to carbonate soda kits in the bottle. Recommended use: all white wines, fruit juices. Ideal Fermentation Temperature: 59-86 F (15-30 C). Alcohol Tolerance: 12% For Soda Making : To create carbonation in the bottle.
Notes : Red Star Pasteur Blanc (formerly known as 'champagne' yeast) is a strong fermenter with good ethanol tolerance, and will readily ferment grape musts and fruit juices to dryness. This strain also has good amount of tolerance to free sulfur dioxide.

Very quick
Very fast starter, no weird foot smell on my finished product before aging. Ran my brew dry in about three weeks, back sweetened it with a little clover honey and watermelon jolly ranchers and it came out really nice.

Hello, I have some questions regarding the Red Star Premier Blanc yeast for dextrose fermentation in hard seltzer production: -We used 300g of Premier Blanc dry yeast for around 10bbls of a 100% dextrose fermentation. We are extremely happy with the final product, but the fermentation took a very long time (8 weeks from pitch to cold conditioning). We fermented at 69F and did two additions of Superfood yeast nutrient (one at knockout and another in the fermenter on day 2 of fermentation) -We are currently about to ramp up to a 30bbl batch (two separate 15bbl batches in one 30bbl fermenter). My questions are: 1) How much yeast would you suggest pitching for 15bbls of 9.5 plato starting gravity? We were also considering spacing the two brews out with a day in between to help build up more yeast cells before racking the second batch in. 2) This yeast has a high-temperature tolerance of 86F. Would there be any drawbacks or possible off flavors that could be produced at this higher temperature? ie; fusal alcohols, etc. Thank you in advance. Cheers, Eric

A:
The yeast in the smaller 5gm packages would need about 5 grams per 5-6 gallons or 95-100 packs to ferment well. The yeast will perform at lower temps in the 60's but will work best, and speed up fermentation time when pitched in the mid to high70's without risk of off flavors

1 packet treats 5-6 gallons of must up to 14% alcohol. You would need about 10 packages for 55 gallons

most wine strains will tolerate about 12-14 ABv or higher when using champagne strains.
D-47 would be one of the less attentuative wine yeasts, or considering S-05 or Nottingham in an ale yeast for one that would hit around 10% on the high end would be an option as well

This is intended for use in winemaking but will rise if used for backing, and just may take a bit longer than Bakers yeast to raise the dough

Instructions to make hard kombucha say to sprinkle yeast on top of sugar water (1 cup each) that is 80° and yeast should start foaming/bubbling within 15 minutes. Nothing is happening. Can you help? Is temperature correct?

You could probably use this for bread if you would like. Keep in mind bread yeast is designed to produce huge amounts of CO2 to aid in rising. Beer yeast is not, you will most likely get a more dense loaf bread.

Depending on the gravity of the must the yeast take a bit more time to show activity in the airlock. Taking a gravity reading on the must to confirm if there is a sugar level change would confirm if the yeast has begun fermenting an is just taking a bit of time to show in the airlock or if it has stalled, and would need to have action taken from there to kick start fermentation. the pricing differs based on the extended price from the vendor and manufacturer of the product consistent with our mark up. The expiration date on the product will be stamped on the side and is typically within 18 months to 2 years from the time the product is shipped
