This mold is ideal for use when making up to 2 pounds of cheese from 2 gallons of milk. The mold will function with any New England Cheesemaking press and can handle a press weight of up to 100 lbs. This smaller mold does not require the amount of weight for pressing as the Large Mold for Hard Cheese (AVAILABLE HERE!)
and therefore does not need a closed bottom to contain the curd mass. The open bottom also provides the best possible drainage. Made from a food grade polypropylene, this mold is imported from France.
