A: The distillers strains are bread for the specific purpose of fermenting out the most possible sugar, with low ester or flavor componds that are given off by the yeast. Champagne yeast can be used but is typically a bit less tolerant of the sugars usedfor distilling as it is bread for fermeting fruit, and the bakers yeast, while it will work, does taste "bready" in the finsihed product. The distillers yeast is a toll made for a specific purpose, but does not have to be used to make a fermented product, just gives you better results.

A: Dry yeast can lasts for years if it has been stored properly, even after it has been opened it will still be viable for quite some time. We typically recommend using dry yeast 1 year after purchase.
