My wife's favorite
This is absolutely one of the best stouts I have ever had. It's my wife's favorite beer, so much so that when I told her I was getting ready to brew a lighter beer for the summer she made me promise that the next beer after that would be another batch of The Darker Lord. I guess I'm going to have to start brewing in 10 gallon batches just so that we can have enough on hand.

Wow. Yes.
I cannot speak to how this might compare to the 'real thing' ... it's hard to imagine that it is really that close, given they add coffee and vanilla (which the kit does not include nor even mention). That aside, WOW, THIS IS GOOD! I've shared it with a few good friends and they were all quite impressed. I will be ordering and brewing this again ... I'll likely leave out the coffee, but I will be adding some vanilla, and some whiskey- or bourbon-soaked oak chips. Mmmmm, can't wait!

REALLY DAMN CLOSE!!!
Can't believe how good this is. Living near 3F I am spoiled and have a good stock of DL and have been able to attend many DLD's. This is REALLY good and really close!!! Very Good. HIGHLY recommended!!! I will buy again.

Q:
When using two packages of yeast, do I use both in the primary fermenting container? Or do I use the second one once I transfer to the secondary container? Another answer on here mentioned taking a gravity reading to know when to transfer to the secondary. Should the gravity reading be the listed FG when it is ready to be transferred?

Bot hapckagef of yeast would be added in the primary or first pitch. The hydrometer reading should be at the fniished g ravity or within a couple of gravity points of that amount before moving the batch onto the secondary fermentation

while we have not tested this recipe with the Hornidal strain, should be an interesting one to try out and would work well due to the low esters and high Alcohol tolerance on the strain-A yeast starter is always a great idea with any yeast for this recipe ; )

The gravity on the kit with the10lbs of malt extract, 2lbs of Honey and the 8oz of corn sugar when used on 5 gallons or wort would be at the 1.107. The recipe sheet likely did not take into accoutn the added honey/sugar in the boil for the reason for the low gravity listing on the sheet and will be corrected

the recipe sheet is normally sealed within the plastic bag containing the steeping bags to help those out if multiple kits are placed on the same order. If you are not finding the recipe sheet in that bag, an email request at

The batch would do fine aged with chops or in a Whiskey barreyl to add in that profile. So long as the batch is in a closer headspace container for long termstoreage to lmiit oxidation, batch conditioning for a few months would not pose an issue

The Darker Lord or Larrys russian imperial stout would be a great bathc to barrel age. Typical time frame will vary based on the brewers taste but 1-2 weeks or up to 4 weeks in a barrel can be done on certain small batched based on how much bourbon or oak flavor s preferred

I just purchased this kit and I have a few questions. I chose to go with the Wyeast 1028. I'm planning on doing a starter a few days before brew day. My question is, I have read that with bigger beers such as this, it is a good idea to pitch 2 or 3 packages of yeast in order to get through fermentation completely. Is this advisable? and why/why not? I also like my stouts boozy and just a little sweet, I added the ABV booster to my order, do you have any recommendations to increase the ABV? Thanks

A:
Building a yeast starter normally eliminates the need for pitching multiple packs since the yeast cell count will increase as it works it way through the starter. this would be the same as adding in multiple packs of yeast without building up a starter culture. The ABv booster will ferment out fully to raise the alcohol content without effect flavor or color in the beer.

Either one would be fine. The English strains will leave behind more residual malt flavor, but the American ale yeast will ferment more vigorously and leave behind less residual sugars in the finished beer.

A:
We love aged stouts and The Darker Lords Imperial Stout is a brew that will definitely age well. The amount of aging you want to do here depends on your palette. You can age in a keg or in a bottle and this will mellow out the beer. We recommend anywhere from 2 months to 2 years or more, that's up to you. Make sure if this is aged in bottles that it's kept out of sunlight. If it's aged in a keg, periodically check that you still have the proper pressure of CO2 in the keg so oxidation or infection does not occur. Thanks for the question!

In the instructions it says "Add both packs of Safale 05..." Being new to brewing, I have a couple of questions about this. First, does the kit come with 2 packs of yeast or do you have to order the second pack separately? Also, is the appropriate yeast S-05 as listed in the recipe, or S-04 as listed in the "yeast options" section of the ordering page. I also would like to know about the time in primary/secondary. I have only made one other stout, and it needed 1 month in primary and 2 months in secondary. Your recipe while not completely clear, seems to suggest a couple of weeks in primary and 1 week in secondary. Am I reading this right? What is the CORRECT amount of time in primary and secondary for this very high gravity beer?

A:
Two packs of safale-05 will work. The yeast is an add on so you need to add a safale-05 separately to your cart. Two weeks in primary and 7-10 days in secondary is sufficient. Always use your hydrometer to do gravity readings and to know when its time to transfer!
