Q: I have only done complete kits until this. I started with the juice, with the yeast. There are no clear instructions on the back. Have been fermenting 10 days, what exact steps now?
A: Taking a hydrometer reading to confirm the yeast has completed fermentation after about 101-4 days would be best. The wine would then be ready to transit to a secondary container to condition and clear. Stabilizers like Sorbate would be added at this time if you do not plan on making the wine sparkling, and clarifying agents like Glycerine, Isinglass or Chitosan are added after the sorbate. The Wine would be ready to bottle after a few weeks, given time to clear
Q: Do you use campden tablet(s) and Potassium Sorbate to stabilize and clear? If so, how do you determine when wine is "clear" enough for sweetening?
A: sorbate can be used to stabilize and back sweeten and normally takes hold within 24 hours, to move forward with sweetening after than. Campden tablets or potassium metabisulfite can be added before bottling to extend shelf life once the batch has cleared to the eye before bottling

A: The manufacturer does include a printed recipe on the backside of the container wehn shipped for following to their specifications for the process

A: No. Original gravity after dilution is 1.077
Q: do you need to add camped tablets during fermentation of this fruit wine base ?

A: Yes you would need to add water to this to make a 5 gallon batch of juice.
