White Claw Black Cherry Hard Seltzer Clone Recipe Kit
This White Claw Clone hard seltzer recipe is a flavored, light and refreshing alcoholic beverage based on mineral water that is perfect for hot and sunny days or when the occasion calls for a light and refreshing alternative. Enjoy!
Kegging is the preferred method of carbonation, but if you're bottling up your black cherry hard seltzer, we recommended using
PET bottles, available HERE!
Included Ingredients:
- Mineral Water Pack(s)
- Corn Sugar (To make the alcohol in your delicious hard seltzer)
- Chitosan Fining* (*Shell Fish Fining do not use if allergic to shellfish. Kit is still usable without, but may be slightly cloudy…that’s ok)
- Natural Fruit Flavor (black cherry)
Not Included:
-6 gallons Distilled or Reverse Osmosis (R/O) Water. If you use tap water, the end result will be cloudy and may have too many minerals or overly strong flavors for desired end product. We strongly recommend Distilled or R/O Water.

Tastes Great
Overall this is a very good seltzer, and tastes comparable to WC. If I do it again I will add a Yeast Nutrient and a different yeast. It took almost 3 weeks to ferment out without any nutrient added. EC118 with nutrients or TY48 would be much faster. After cold crashing it I filtered it through a .6um charcoal filter which removed any leftover yeast, and the yeast phenols. Very happy with the final product, I just wish the directions talked about using yeast nutrients.

The recipe states 3 lbs of sugar but I received a 3 lb + a 1 lb bag. Is the extra 1 lb to go with the alcohol booster?

I brewed this clone on 2/8/20 and my og was 1.034, after letting it sit for 7 days the gravity was only 1.028. The instructions said it should be at .999 to 1.002 before secondary, well I still have it in primary (2/29/20) because the gravity has only dropped to 1.024. Is there anything I can do to drop the gravity to .99-1.002?

A:
the stall is normally attributed to not enough nutrients, low temps, and low oxygen in the batch. Warming the fermenters into the 70's and stirring the must vigorously, or pour back and fourth between two sanitzied buckets to introduce more oxygen would be the best bet to help jump start fermenting.

This will vary a bit depending on the rate of carbonation you prefer. I like to use 40 PSI for 24-48 hours and serve around 20 PSI for best results i Have found. This will vary a bit depending on line length, temperature of the beverage, and personal preference

the mineral pack is the additives we provide to put into the distilled water needed to make this kit, which is void of all minerals. It contains (1.25 grams Magnesium Sulfate aka Epsom Salt (Heptahydrate), 1.25 Grams of Magnesium Chloride (Hexohydrate) and 1.5 grams of Sodium Bicarbonate aka Baking Soda.

dextorse would be the ideal sugar but table sugar can work in a pinch if needed. 1oz per gallon of the finished product is recommended and can be found on our site here to purchase if preferred Item ID 24-9760

The boil process should just last long enough to dissolve the sugars. 10-15 minutes in this case will suffice

It should be fairly low sugar. The yeast is eating the sugar that is added and turning it into alcohol so the end product should be fairly dry.
