Apparent Attenuation Range (%) : 75-80
Flocculation : Medium - Low
Alcohol Tolerance : Medium - High (8-12%)

Pitching/Fermentation : A classic Biere de Garde strain that produces slight esters and mild phenols. 

Notes : This yeast fully attenuates, producing a beer with a crisp, dry beer that preserves the sweeter aromatics from the grain bill. This strain contains the STA1 gene, which allows this yeast to utilize some dextrins (unfermentable sugars) which can result in higher levels of attenuation.
