Q: I mistakenly purchased two of the 24-3586 World Vineyard California Trinity White, not knowing it was a concentrate. It has been fermenting, non-diluted, for about 6 weeks. I have 6 gallons of a thick alcohol goo. Should I split the batch and re-ferment adding water? Or, just start over?
A: IF the batch has already fermented out at this stage, adding in the water dillute, and checking the gravity would be best as this will tell you if there are still sugars that nee to be converted by the yeast, or if it just needs to be blended with water to add the correct body to the wine.
