Pitching/Fermentation : This strain is the classic farmhouse ale yeast. A traditional yeast that is spicy with complex aromatics, including bubble gum.

Notes : It is very tart and dry on the palate with a mild fruitiness. Expect a crisp, mildly acidic finish that will benefit from elevated fermentation temperatures. This strain is notorious for a rapid and vigorous start to fermentation, only to stick around 1.035 S.G. Fermentation will finish, given time and warm temperatures. Warm fermentation temperatures at least 90°F (32°C) or the use of a secondary strain can accelerate attenuation.

Great for Saisons, but...
I bought this yeast to start a Belgian-style saison, and I must say that the resulting mouthfeel and taste (crisp and fruity, but not overly so). However, if you do not have a homebrew setup that allows for high temperature control (80+ degrees F), you could run into issues with attenuation (mine reached about 73%, while the range is supposed to be 76-80%). I still recommend buying this yeast for saisons if you have the right setup, but if not, I'd suggest the Wyeast 3711 French Saison (not quite as good as a flavor, but less of a risk).
